No-Bake Millionaire’s Shortbread

A simple no-bake take on classic millionaire’s shortbread, with a buttery biscuit base, smooth caramel layer and glossy chocolate topping.

Ingredients

  • 300g shortbread biscuits
  • 100g butter, melted
  • 1 can caramel or dulce de leche (approx. 400g)
  • 200–250g chocolate (milk, dark or a mix)

Method

STEP 1

Crush the shortbread biscuits and mix with the melted butter. Press firmly into a lined tin to form the base, then chill for 20 minutes.

STEP 2

Spread the caramel evenly over the chilled biscuit base and return to the fridge for another 20 minutes.

STEP 3

Melt the chocolate over a heatproof bowl set above a saucepan of gently simmering water.

STEP 4

Pour the melted chocolate over the caramel layer, smoothing the top neatly.

STEP 5

Chill until fully set, then slice into squares and serve.
