Slow Cooker Beef Rigatoni

A comforting slow cooker pasta dish with tender beef mince, rich tomato sauce and rigatoni, finished with parmesan and fresh parsley.

Ingredients

  • 60g dried rigatoni pasta
  • 250g beef mince
  • 1 large onion, chopped
  • 4 garlic cloves, chopped
  • 350ml tomato passata
  • 1 tbsp tomato purée
  • 60ml single cream
  • 2 cups hot vegetable stock
  • 1½ tsp Italian seasoning
  • ½ tsp chilli flakes
  • 30g grated parmesan
  • 1½ tbsp extra virgin olive oil
  • Chopped fresh parsley
  • Salt and pepper

Method

STEP 1

Heat the olive oil in a pan and brown the beef mince with the chopped onion. Once cooked, transfer to the slow cooker.

STEP 2

Add the garlic, tomato passata, tomato purée, single cream, Italian seasoning and chilli flakes. Season with salt and pepper, then stir well.

STEP 3

Cook on high for 2 hours.

STEP 4

Add the hot vegetable stock and dried rigatoni to the slow cooker and stir to combine.

STEP 5

Continue cooking on high until the pasta is cooked through and the sauce has thickened.

STEP 6

Serve topped with grated parmesan and fresh parsley.
