Ingredients

  • ½ Onion, raw
  • 4 Tomatoes
  • 1/2 tsp Thyme
  • 1/2 tsp Parsley, dried
  • 1 tbsp Italian Seasoning
  • 1/4 tsp Black Pepper, ground
  • 1/4 tsp Sea Salt
  • 3 tbsp Olive Oil
  • 1 1/2 cup Water
  • Bread, to serve

Method

STEP 1

Preheat your oven to 350 degrees.

STEP 2

Add the halved tomatoes to a shallow pan or roasting tray and drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven until the skin wrinkles and begins to brown – around half an hour. Then take out and set aside to cool.

STEP 3

Whilst your tomatoes are roasting in the oven, add olive oil to a saucepan and cook chopped onion until caramelised. Set this aside to cool.

STEP 4

Once cooled, add all ingredients into the blender until the mixture becomes thoroughly smooth.

STEP 5

Put the mixture into a pot and heat the stove until it is warmed.

STEP 6

Enjoy your soup with a side of crusty bread, garlic bread, or vegetable crisps.
