Delicious lamb curry recipe in the slow cooker

The traditional lamb curry is a perfect blend of aroma and spices. The hearty and meaty curry, along with the warmth from the spices, makes this lamb curry, unlike anything you have ever tried. This lamb curry recipe in the slow cooker is jam-packed with flavour. The meat is tender thanks to the slow cooker. The curry is finished off with heavy cream giving it a richness and depth of flavour. Serve this dish with rice or naan.

Ingredients

  • 2 tbsp olive oil
  • ½ kg lamb leg, cut into equal pieces
  • 2 medium onions, chopped
  • 3 garlic cloves, minced
  • 2-inch ginger piece, grated
  • 2 green chilies, finely chopped
  • 1 tbsp all-spice
  • 1 tbsp curry powder
  • 4 cardamom pods
  • 1 cinnamon stick
  • 1 star anise
  • 2 tsp ground cumin
  • 120ml fresh coriander, finely chopped
  • 3 medium tomatoes, chopped
  • 370ml lamb stock
  • 250ml heavy cream
  • Salt

Method

STEP 1

In a large skillet, heat a tablespoon of oil. Add lamb pieces and cook for 6 to 8 minutes or until they get a colour. Transfer the pieces to a slow cooker.

STEP 2

In the same skillet, heat the remaining oil. Add chopped onions and cook for 5 minutes or until the onions start getting colour.

STEP 3

Add minced garlic, ginger, chopped green chilli, curry powder, all-spice, cumin, cardamom, cinnamon, and star anise.

STEP 4

Continue to cook until the spices are fragrant. Transfer this mixture to a slow cooker as well.

STEP 5

Add finely chopped tomatoes, and pour lamb stock in the slow cooker. Season with salt, stir and seal the lid.

STEP 6

Cook at low heat for about 5 to 5 and a half hours or until the meat is tender.

STEP 7

Lastly, add heavy cream and let it simmer for 5 to 7 minutes.

STEP 8

Sprinkle chopped fresh coriander and serve with rice or flatbread. Enjoy!
