Simple mozzarella salad

Ingredients
- 125g buffalo mozzarella, drained and torn into small chunks
- 100g baby spinach
- 100g sun-dried tomatoes
- ½ cucumber, cut into ribbons
- 1 yellow pepper, deseeded and cut into strips
- 2 tsp pumpkin seeds
- 2 tsp balsamic vinegar
- 1 tbsp olive oil

Method
STEP 1
Once you've chopped your veg, combine them with the spinach and sun-dried tomatoes in a large bowl and toss. If you're struggling to get nice thin slices, why not invest in a Swan 5 Piece Knife Block? After all, a chef's only as good as his tools!
STEP 2
Divide the salad between two plates and scatter the mozzarella and pumpkin seeds over the top. Drizzle the balsamic vinegar and olive oil over the top and serve immediately.
