Ingredients
- 3 cups grated zucchini
- ¼ cup all-purpose flour
- ¼ cup grated Parmesan
- 1 whole egg, beaten
- 2 garlic cloves, minced
- 2 tbsp olive oil
- black pepper, to taste
- salt, to taste

Method
STEP 1
Firstly, trim the edges and grate the zucchini. Place it in a colander. Place the colander over the sink or a large bowl.
STEP 2
Add about a tablespoon of salt and toss. Let it sit for about 10 minutes or until excess water is released.
STEP 3
Squeeze the zucchini to get rid of excess water. Once done, place it in a large bowl.
STEP 4
Add all-purpose flour, minced garlic, grated parmesan cheese, egg, and black pepper. Mix the ingredients until they are well combined.
STEP 5
In a large frying pan, add olive oil and place it on medium heat.
STEP 6
Once the oil heats up, add about a tablespoon of batter onto the pan. Flatten it using a rubber spatula.
STEP 7
Cook the fritter on one side for about 2 minutes and flip. Let it cook for two more minutes until it gets a golden-brown color.
STEP 8
Take the fritters out of the pan and serve with your favorite sauce. Enjoy!
