
Cinnamon Roll Pancakes

Ingredients
- 90g unsalted butter
- 1 large egg
- 110ml milk (any)
- 120g plain flour
- 2 tbsp caster suger
- 2 tsp baking powder
- 1/4 tsp salt
- 40g light brown sugar
- 2 tsp cinnamon
- 30g cream cheese
- 40g icing sugar
Method
STEP 1
In a bowl, add 30g of the butter (melted), 1 lightly beaten large egg and 110ml of milk
STEP 2
Whisk the mixture until combined
STEP 3
In another bowl, add 120g of plain flour, 2 tbsp caster sugar, 2 tsp of baking powder and 1/4 tsp salt,
STEP 4
Whisk until combined
STEP 5
Now add the wet ingredients
STEP 6
Whisk again until combined
STEP 7
Let the pancake batter rest for 10 minutes
STEP 8
To a seperate bowl, add 40g light brown sugar, 2 tsp cinnamon, 30g unsalted butter (melted),
STEP 9
Mix, add 1 tbsp of pancake batter and mix again
STEP 10
On to a hot pan, add 1/4 cup of pancake batter.
STEP 11
Add a swirl of cinnamon sugar onto top of the pancake batter in the pan
STEP 12
Flip once bubbles start to form on the top
STEP 13
Continue to make pancakes until you're happy with the amount.
STEP 14
To create drizzle, add 30g cream cheese (room temp), 30g of unsulted butter (softend) and 40g Icing sugar
STEP 15
Mix until smooth
STEP 16
Drizzle over pancakes and enjoy!
