Sweet Potato Pie

Just because you don’t celebrate Thanksgiving doesn’t mean you can’t enjoy this delicious autumnal staple! Try our sweet potato pie recipe for yourself.

Ingredients

  • 1 cup of Walnuts, raw and unsalted
  • 1 cup of Pecans, unroasted
  • 1 cup of Dates, pitted
  • 2 Sweet Potatoes, peeled, cooked and cooled
  • 1 cup of Coconut Milk, unsweetened
  • 1 tsp Maple Syrup
  • 1 tbsp Vanilla Extract
  • 1/2 tsp Cinnamon, ground
  • 1/8 tsp Sea Salt

Method

STEP 1

Add walnuts and pecans into your blender and mix into small bits.

STEP 2

Once done, set this to one side.

STEP 3

Grab your dates and blend these down into small bits.

STEP 4

Add the dates to the nut mixture and mix to combine.
- If too sticky, add nuts.
- If it's not sticking together, add more dates to the mixture.

STEP 5

In a pie pan, spread the crust mixture and firmly press down until it completely covers the pan, including the edges.

STEP 6

For the filling, take all remaining ingredients and blend until smooth.

STEP 7

Pour mixture on top of the crust.

STEP 8

Bake for an hour at 350 degrees Fahrenheit.

STEP 9

Top this with some pecans and whipped cream and enjoy!
