Method
STEP 1
Pat, the fish, dry using kitchen towels and set aside,
STEP 2
In a shallow dish or a large bowl, add all-purpose flour, salt, and black paper. Place the fish in the flour mixture so that it coats all sides of the fish. Shake the fish to remove excess flour.
STEP 3
In a nonstick pan, add ½ tablespoon of butter and olive oil. Place it on medium heat and let the butter dissolve.
STEP 4
Place the flour-coated fish in the pan and let it cook for about 4 minutes. Flip and cook the other side for four more minutes.
STEP 5
Once the fish gets a golden-brown color, remove it from the pan and set it aside.
STEP 6
Reduce the heat to low and pour white wine. Using a wooden spoon, stir the wine in the pan to remove the bits. Let it deglaze.
STEP 7
Add ½ tablespoon of butter and let it melt. Add garlic, fresh oregano, thyme, and parsley. Sauté the ingredients for about 30 seconds.
STEP 8
Pour chicken broth and let the mixture simmer for 30 seconds.
Take the pan off the heat, add the remaining butter and lemon juice. Mix well and serve on top of the cooked sea bass. Enjoy!
