Poached Egg & Avocado on Toast

Ingredients

  • 1 ripe avocado
  • 1-2 slices of your favorite bread (sourdough works well)
  • 1-2 eggs
  • Salt and pepper, to taste
  • Red pepper flakes or chili flakes (optional)
  • Olive oil (optional)

Method

STEP 1

Start by toasting your bread slices until golden and crispy. You can use a toaster or a grill pan for this.

STEP 2

While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.

STEP 3

Mash the avocado with a fork, adding a pinch of salt, pepper, and a splash of lemon juice if desired. Adjust to your taste.

STEP 4

Fill the swan egg poacher with water and bring it to a gentle simmer. Make sure the water doesn’t boil too vigorously.

STEP 5

Crack an egg into each compartment of the poacher.

STEP 6

Cover the poacher and let the eggs cook for about 3-5 minutes, or until the whites are set but the yolks are still runny. Adjust the time based on how well-done you like your yolks.

STEP 7

Spread the mashed avocado generously over the toasted bread.

STEP 8

Carefully remove the poached eggs from the poacher and place one on top of each avocado toast.

STEP 9

Season with additional salt and pepper, and sprinkle with red pepper flakes or chili flakes if you like a bit of heat.

STEP 10

Drizzle with olive oil for added flavour, if desired.
