Creme Brulee Mini Cheesecake

Ingredients
- 200 g digestive biscuits
- 100 g melted butter
- 300 g cream cheese softened
- 100 g granulated sugar
- 1 tsp vanilla extract
- 2 eggs
- 100g heavy/double cream
- 20g all-purpose flour
- 4-5 tbsp sugar for topping.
Method
STEP 1
Crush 200g of biscuits in a bowl, and add 100g of melted butter.
STEP 2
Whisk 300 g of cream cheese, half way through add some sugar then continue whisking.
STEP 3
Add 20g of flour, 1 tsp of Vanilla extract, 2 eggs and 100 g double cream and whisk
STEP 4
In a heat proof pot, add the biscuit crumbs then layer the whipped mixture on top
STEP 5
Bake for 30 minutes at 180 degrees
STEP 6
Add sugar to the top and caramelise with a blow torch
